Mexico has a large number of dishes that are not only nutritious, but also delicious and very simple to prepare, and beef entomatado is one of the best examples of this. Being a beef stew, its bases are chambarete and green tomatoes.

Ingredients for the preparation of the entomatado

½ chambarete with bone.

½ of beef in pieces to stew.

1 ½ medium onion.

5 cloves of garlic.

1/8 of tablespoon of thyme.

1/8 of tablespoon of marjoram.

3 bay leaves.

1 kg of green tomato.

3 canned chipotle peppers.

3 peppercorns.

2 cloves.

Vegetable oil.

1 tablespoon of salt.

Depending on your preference, you can also add ½ kg of beef ribs to enhance the protein and another nuance of flavor to the beef entomatado. Additionally, you can add or subtract 1 chipotle depending on your palate for spiciness.

Preparation of the beef stew

Step 1

Put the meat in a pot along with half an onion, 3 cloves of garlic, thyme, marjoram, bay leaf and a tablespoon of salt, covering everything with water. Let it boil with the lid on medium heat for 1 hour and 45 minutes.

In case you have an express or pressure cooker, the cooking time is reduced to about 35 minutes.

Step 2

Wash and cut into pieces the remaining onion, the tomatoes and the remaining 2 cloves of garlic; The garlic must be very finely chopped. Additionally, using a mortar, pepper and cloves are crushed.

Step 3

In a saucepan, heat 2 tablespoons of vegetable oil and fry the onions over medium-high heat. Once they start to change color, add the garlic and fry for another minute.

Step 4

Add the tomato to the onions, salt to taste and cook over medium heat for about 5 minutes, or until the juices begin to release.

Chipotles and crushed spices are introduced and left to cook for another 15 minutes or until the tomato softens.

Step 6

Add the meat and about 1 cup of the meat broth. It is stirred and the point of salt is rectified and it is left to cook for another 15 minutes so that the flavors are integrated.

In case the tomatoes are very acidic, it can be neutralized with a teaspoon of baking soda. If the stew is still somewhat acidic, you can add another pinch of baking soda.

Quantities are enough for 4 servings and can take 1-2 hours to cook depending on whether or not you have a pressure cooker. So, we invite you to prepare this beef entomatado and we recommend serving it with a side of stewed beans and corn tortillas.
