Charro beans

One of the main traditional Mexican recipes is charro beans, being a spicy and very complete dish to fill the stomach and lift the spirit. This recipe is very simple and here we teach you how to make it step by step.

ingredients for the beans

½ kg of beans.

2 ½ liters of water.

2 cloves of garlic.

½ onion.

1 ¼ teaspoon of salt.

For the beans you can use whatever you have at your disposal, mainly bay, pinto or Peruvian beans.

Ingredients to prepare the charra

150 grams of bacon (about 4 slices in squares).

150 grams of sausage.

30 grams of pork rinds.

100 grams of sausages (about 3 units in squares).

100 grams of ham (in squares).

1 small onion.

1 large garlic clove.

3 tomatoes (in squares).

1 serrano or jalapeño pepper.

1 small bunch of coriander.

The chicharrón is an optional ingredient, but it gives a new nuance of flavor to the charro beans, so we recommend it.

Preparation of charro beans

Step 1

Preferably, the beans are left to soak for about 10 or 12 hours. Failing that, you can boil them in water for 5 minutes and then let them soak for a couple of hours.

Step 2

The beans are rinsed, washed, drained and transferred to a pot with the water, onion and garlic and left to cook for about 1 hour and a half over medium heat. Then add the salt and let them cook for another 10 minutes.

If the water evaporates during cooking, you must replace it, but heating it beforehand.

Step 3

In a saucepan, fry the bacon over medium-low heat, without adding oil. And once it starts to brown, add the chorizo.

Step 4

When the chorizo ​​is cooked, add the sausages and ham and after cooking for 3 minutes, add the onion and cook until golden brown.

Once the onion changes color, add the garlic and the chopped tomatoes. After the latter begins to release the juice, the minced chili is added.

Step 6

Once the tomato is well cooked, add the beans with a little of the cooking water and cook for about 10 minutes.

Step 7

Add the cilantro and, if desired, the pork rinds, stir and taste for seasoning. Finally, let them cook for another 5 minutes and it will be ready to serve.
