Coconut cake

Although it is not usually a very common homemade dessert, coconut cake is a delicacy that everyone can learn to prepare to surprise friends and family during a meeting. And with this recipe, the process will be simple and the result exquisite.


If you want to prepare this recipe, first you need to collect all the ingredients, and although they are quite a few, they are easy to know. For the entire recipe you will need:

1 and ½ cup of milk.

The juice of 2 lemons.

340 grams of butter.

300 grams of sugar.

8 eggs.

1 teaspoon of vanilla.

3 and ½ cups of flour.

4 teaspoons of baking powder.

1 teaspoon of baking soda.

1 teaspoon salt.

1 cup of toasted grated coconut.

Grated coconut to taste for decoration.

4 packages of cream cheese.

¾ cup of coconut cream.

½ cup of whipping cream.


Once you have the necessary ingredients, you can start preparing the coconut cake, following the steps to the letter. And then they are explained in detail so that you have complete success:

Step 1

Preheat the oven to 180ºC. Meanwhile, in a bowl mix the milk with the lemon juice and let them rest for 15 minutes.

Step 2

In a bowl, add the butter and sugar and beat until creamy.

Step 3

Then add the eggs one at a time, waiting for each one to fully integrate before adding the other. Then add the vanilla and beat continuously for 7 minutes.

Step 4

Inside the mixture, sift the flour, salt, baking soda, baking powder and coconut. After adding each one, pour a little of the milk and lemon mixture and beat until integrated. At the end, beat for another 7 minutes.

Butter and flour 2 molds and divide the mixture between them. Then put in the oven for 35 minutes.

After removing from the oven and while they are allowed to cool, prepare the cream. To do this, beat the cream cheese with the coconut cream and the whipping cream in a bowl for 8 minutes.

Step 7

Take one of the cakes and spread the upper face with half of the cream with the help of a spatula. Place the other cake on top and cover the entire surface and sides with the rest of the cream and then decorate with grated coconut.
