For a recipe to be tasty, it does not have to be complicated and there is no simpler or more tasty example than coditos soup, a classic of Mexican cuisine, popular for celebrations. With a very simple preparation, it is very versatile, allowing you to add aromatics and decorations to your liking.


200 grams of elbow pasta.

50 grams of butter.

4 medium cloves of garlic.

4 ripe tomatoes.

1 small onion.

1 liter of chicken broth (either homemade, canned or consommΓ© cube).

1 poblano pepper (deveined, seedless and roasted).

Salt to taste.

If you wish, you can add other ingredients to garnish or give new flavor to the elbow soup. An example is semi-hard white cheese, either grated or in chunks. Additionally, to give the dish a greater aroma, you can garnish with coriander or parsley leaves or cambray onion to give it a fresher touch.

Steps to prepare the soup

Step 1

Cut the onion in half and place it to boil in a pot with 2 cloves of garlic and salt. Once it boils, add the paste and let it cook for as long as the package indicates, stirring constantly to prevent it from sticking

Step 2

Once the pasta is cooked, it should be removed from the heat, strained and stored. You can keep the onion and garlic cloves for use in the sauce if you wish, but it is not necessary.

Step 3

In a blender, pour the tomatoes with the remaining onion and garlic with half a cup of water. Blend until smooth and strain.

Step 4

In a saucepan, heat the butter and add the sauce, seasoning with salt, to cook it for about 15 minutes. Then pour in the chicken broth, stir and cook until thickened.

Once the soup is cooked, add the previously prepared coditos together with the chili, rectify the salt and leave over low heat for 1 or 2 minutes.

Serve the elbow pasta soup in a bowl and decorate as you like. Parsley or coriander leaves, or semi-hard cheese that melts slightly are recommended.
