Fish Broth with Vegetables

An ideal recipe for the season of Lent is fish broth with vegetables, as it is a very nutritious option when red meat is avoided in the diet. Even so, this traditional Mexican recipe is ideal for the whole year thanks to its easy preparation, low cost and excellent flavor.

Ingredients for the fish broth

1 ½ white fish (mainly sea bass, tilapia, mojarra…).

½ small onion.

½ stick of celery.

250 grams of tomato.

2 cloves of garlic.

2 carrots.

1 medium chayote.

2 large zucchini.

Vegetable oil.

Salt to taste.

Additionally, aromatic herbs can be added according to your tastes such as cilantro, parsley or cambray onion. Finally, a touch that can enhance the flavor of fish broth with vegetables is to add a little lemon juice after cooking.

Steps to prepare the fish broth

Step 1

Vegetables should be washed and processed, cutting them into medium cubes for quick and even cooking.

The fish must be in wheels and have the head.

Step 2

In a pot, fry the onion and garlic with the vegetable oil until golden brown and the onion turns translucent.

Step 3

In a blender, add the tomatoes, and the garlic and onions and blend with a cup of water until smooth.

Step 4

The sauce is strained and poured back into the pot where the onion and garlic were fried and left to cook over medium heat for a couple of minutes. Then add 2 liters of water and bring to a boil.

Once it boils, lower the heat to medium-low and add the carrots, celery, and zucchini. Season with salt to taste and cook covered for 20 minutes.

Then the fish is added, including the head, as well as the aromatic herbs and it is left to cook for another 15 minutes.

Step 7

The head of the fish is removed and served in a bowl, garnished with a little of the fresh aromatic herbs and, if desired, adding a touch of lemon juice.

With these ingredients you can make fish soup for 8 people, and it takes approximately 2 hours. Fish broth with vegetables is a very versatile recipe, since you can add whatever vegetables you want and, as you can see, it is very easy to prepare.
