Chaufa rice is an iconic dish of Peruvian cuisine, being a dish that is a version of the classic Chinese rice or American fried rice. This is a delicious and simple dish that anyone can prepare in a few minutes.

Ingredients

To prepare this recipe you need several ingredients, but all very easy to get, if you don’t already have them at home. What is needed is:

4 cups of white rice (previously cooked and refrigerated).

½ kilogram of chopped beef or pork loin.

4 eggs.

2 teaspoons of grated ginger.

1 cup chopped chives (save some of the green part)

1 tablespoon of minced garlic.

1 red bell pepper julienned.

4 sliced ​​sausages.

Soy sauce.

Salt to taste.

Vegetable oil.

Steps

After collecting all the ingredients in the amounts indicated, you can start preparing the dish, in a fairly simple process. This explains in detail all the steps that must be followed:

Step 1

In a pan, heat a splash of vegetable oil, without burning. Then add the meat and cook for about 5 minutes. After the time, remove and reserve the meat.

Step 2

While the meat is cooking, beat the eggs in a bowl with a little salt. Then, heat oil in the pan again and pour in the egg, to make a thin omelette. Once cooked on both sides, cut into strips and set aside.

Step 3

Heat again with a splash of oil and then add the sausages, followed by the garlic, ginger, bell pepper and chives. Let sauté for about 30 seconds.

Step 4

Add the meat back and mix well. Then add the rice and soy sauce to taste and mix well to integrate the ingredients.

Once the rice takes temperature, the seasoning is rectified and more soy is added if necessary. Once done, add the egg and sauté for another 30 seconds.

Step 6

Serve the portions on individual plates garnished with a little of the green part of the chives.
